Pineapple Strawberry Smoothie

I’m a working girl so week-ends are my best opportunities to create experiments.  This week-end instead of putting the juicer to work for us we placed fresh ingredients into the blender to create a smoothie.  This is something I have rarely done and so I was eager to see how it would turn out.

I started with some fresh pineapple and fresh strawberries.  These went into the blender with a cup of vanilla yogurt.  I whipped them together until they were smooth and poured them into glasses.

According to the California Strawberry Commission, strawberries are a good source of Vitamin C, high in fiber, potassium and antioxidants.

As you might guess, this was a complete delight and a yummy week-end breakfast.  I plan to try some other combinations with other fresh fruits.

Dinner in a hurry – Broccoli Cheese Omelets

We frequently have evenings that are so hectic that all we want to do is eat something quickly before we fall into bed.  Believe me when I tell you that firing up the stove and cooking something is not my fondest thought during those times.  But what we have found is that too often we turn to a quick drive through restaurant, which can be a disaster to a healthy diet, particularly when  we are tired & hungry.   That situation can lead to diminished willpower and possible poor dietary choices.

Here is a quick-y that can be made at home with very little trouble.

Steam a half head of broccoli in the microwave.  If you have some left over broccoli in the fridge, that is even better. Whisk together two eggs with about 1 tablespoon of milk. Eggbeaters work well, too.  Pour the eggs into a skillet that has been sprayed with a non-stick cooking spray.
Place the steamed broccoli on the center of the omelet.  Add one (1) ounce of Velveeta Cheese, cubed.
Continue to warm the omelet until the cheese melts.  The cheese will continue to melt even after you have removed it from the skillet.  Throw a piece of whole wheat bread in the toaster and you have a nice warm meal.  This allows for a quick clean up so you can drag your tired aching body to bed!

Brummel & Brown (made with Nonfat Yogurt) — is it good?

Dear Hubby and I are always on the look out for products that will offer great taste while at the same time be a more healthful choice.  The issue of butter is always a challenging effort because there is precious little that equals the sweet creamy flavor of, well…butter.

After recently reading about Brummel & Brown in one of the “Eat This, Not That” books, we decided to give it a try.

It was listed at $3.49 at our local Midwestern grocery store.  It has a similar appearance to some of the other “tubbed” margarine products and the fragrance was pleasant.  We smeared some on whole wheat toast and found the taste to be good, but it didn’t melt very well.  We also put some on a hot roasted vegetables and it did melt a little better and tasted quite fine this way.

One tablespoon of this spread has 45 calories (of which the number of fat calories is, yes – 45).  There are 102 calories in a tablespoon of butter, so this is a nice way to budget if you are on a calorie controlled diet.    It lists 35% vegetable oil blend, one of which is the controversial Palm oil and Palm Kernel Oil – both are highly saturated fats.

It seems that this product would be like everything else — use in moderation.

Oscars 2013 – Who will win?

It is so easy to get caught up in the presentation of the Oscars every year.  I’ll admit it is a little more difficult for me to manage my score card now that the number of movies has increased from five, but I still try.  We have usually seen some of the movies by the time the event rolls around, so we feel like we have a stake in the competition with our own objective subjective opinion (which is highly educated and wholly insightful, of course) Laughing.

The Oscar presentation is a good opportunity to cook up something special, whether for a crowd or simply for the ‘fam’ at home.  Tonight we are going to a throw-back from years ago and we’ll have a quasi-Mexican style casserole (recipe to follow later).  Will you be serving anything fun for the Oscar presentation tonight?

Juice of the Day – Fruit & Veggie Blend

Today’s juice was a random combination of the fruit and veggies and turned out to be yummy.

Here is what I used:

1/2 fresh pineapple

1/2 cantaloupe

1 large stalk of Kale, stem removed

A giant hand full of spinach

1 beet

3 oranges

a small bunch of parsley

Served 2

Juice of the Day - pineapple, cantaloupe, kale, orange, spinach, parlsey, beet

This one was very delicious, and we have decided that we like almost any juice that has cantaloupe included.  Cantaloupe has an overpowering essence, but not in a bad way.  Highly recommend this combination.!

We when need a hamburger bun to create a great hamburger, turkey burger, or black bean burger, we use these.  They are quick and easy in the bread machine and they turn out perfect every time, even when you make variations in the ingredients.  I use one of our water tumblers to cut the shape because it is a perfect size, after it rises, to use as a burger bun.  You could make these without a bread machine, but I never have tried it that way.  I love the convenience of the bread machine.

Basic Ingredients for Bread

Load the bread machine in the order recommended by the manufacturer.  Most of them prefer the wet ingredients first.

  1. 1-1/4 cups warm milk (I use fat-free organic)
  2. 1 egg
  3. 2 tablespoons butter, softened (You can substitute olive oil)
  4. 1/4 cup honey (Spritz the measuring cup with Pam before hand and the honey will slip out easily).
  5. 3/4 teaspoon salt
  6. 1 cup whole wheat flour (remember to store your whole wheat flour in the refrigerator to maintain freshness)
  7. 1/2 cup flax meal (you could also use what germ, whole bran, or oatmeal)
  8. 1/4 cup gluten (you can omit and replace with flour, but I have found that it gives the dough a certain elasticity that improves the final product)
  9. 2 cups bread flour
  10. 2 teaspoons bread machine yeast

 DIRECTIONS:

  1. Place ingredients into the bread machine pan in the order recommended by the manufacturer.
  2. Select the DOUGH cycle.
  3. When the dough cycle has completed turn the dough out onto a floured board and use a rolling-pin to roll it to 3/4 inch thickness.

          4. Cut the rolls with a biscuit cutter or glass that creates the size roll you wish.

Use something to cut the dough that will give you the size you desire.

5. Put the buns on a cookie sheet that has been lightly sprayed with                        non-stick spray.

6. Allow to rise until doubled — 35-60 minutes.

7.Bake in a 350 degree oven for 10-15 minutes.

8. When the rolls are cooked, spray them lightly with olive oil spray.

I have made these in a lot of different ways with a variety of grains and flours. Sometimes I replace the flax meal with bran. I have tweaked this recipe many times, but I have finally achieved the goal.

FREEZE ME – you can store these in the freezer if you use freezer bags.  They work well grilled for a hamburger after they have thawed.

ECONOMY – These are very economical to make, and they store well in the refrigerator where they will last as long as buns purchased in the store.

HEALTHY – The goal with this recipe was to keep it healthy.  They are not particularly low in calories, but healthful nonetheless.Warm Wheat Buns
