BEST Wheat Buns

We when need a hamburger bun to create a great hamburger, turkey burger, or black bean burger, we use these.  They are quick and easy in the bread machine and they turn out perfect every time, even when you make variations in the ingredients.  I use one of our water tumblers to cut the shape because it is a perfect size, after it rises, to use as a burger bun.  You could make these without a bread machine, but I never have tried it that way.  I love the convenience of the bread machine.

Basic Ingredients for Bread

Load the bread machine in the order recommended by the manufacturer.  Most of them prefer the wet ingredients first.

  1. 1-1/4 cups warm milk (I use fat-free organic)
  2. 1 egg
  3. 2 tablespoons butter, softened (You can substitute olive oil)
  4. 1/4 cup honey (Spritz the measuring cup with Pam before hand and the honey will slip out easily).
  5. 3/4 teaspoon salt
  6. 1 cup whole wheat flour (remember to store your whole wheat flour in the refrigerator to maintain freshness)
  7. 1/2 cup flax meal (you could also use what germ, whole bran, or oatmeal)
  8. 1/4 cup gluten (you can omit and replace with flour, but I have found that it gives the dough a certain elasticity that improves the final product)
  9. 2 cups bread flour
  10. 2 teaspoons bread machine yeast


  1. Place ingredients into the bread machine pan in the order recommended by the manufacturer.
  2. Select the DOUGH cycle.
  3. When the dough cycle has completed turn the dough out onto a floured board and use a rolling-pin to roll it to 3/4 inch thickness.

          4. Cut the rolls with a biscuit cutter or glass that creates the size roll you wish.

Use something to cut the dough that will give you the size you desire.

5. Put the buns on a cookie sheet that has been lightly sprayed with                        non-stick spray.

6. Allow to rise until doubled — 35-60 minutes.

7.Bake in a 350 degree oven for 10-15 minutes.

8. When the rolls are cooked, spray them lightly with olive oil spray.

I have made these in a lot of different ways with a variety of grains and flours. Sometimes I replace the flax meal with bran. I have tweaked this recipe many times, but I have finally achieved the goal.

FREEZE ME – you can store these in the freezer if you use freezer bags.  They work well grilled for a hamburger after they have thawed.

ECONOMY – These are very economical to make, and they store well in the refrigerator where they will last as long as buns purchased in the store.

HEALTHY – The goal with this recipe was to keep it healthy.  They are not particularly low in calories, but healthful nonetheless.Warm Wheat Buns
